Building The Perfect Autumn Salad

Now we’re preparing to enter into autumn, getting some recipes and meal plans in the books for the season is key to stick on track with a balanced diet! The perfect autumn salad is a great quick lunch to bring to work, to cook for the family or a quick and easy dinner.

The key to a perfect autumn salad is combining the right ingredients together. Light and fresh salads usually are suited for the summer months, when it is a bit hotter outside. Combining in some hot foods into your salad like roasted nuts or sweet potato provides the comfort of a warm meal in the colder months. Including fruits such as figs, roasted apples and beetroot provide a more heavy and comforting touch.

This FitFarms Autumn Salad below is filled with nutrition and flavour, perfect as the weather starts getting more chilly:

Ingredients

80g Rocket leaves

2 Small Sweet potatoes

1 Apple

3 tbsp Nuts/Seeds (pumpkin seeds/walnuts)

25g Feta Cheese

1tbsp Maple Syrup

1btsp Dijon Mustard

2tsp Miso Paste

2tbsp Vinegar

1 Handful Pomegranate Seeds

1tsp Olive Oil

Method

Firstly peel your sweet potatoes, chop into small cubes and add any seasoning/spices you’d like.

Add the cubes to a tray with olive oil and roast for 30 minutes at 200C.

Prepare dressing. Combine Dijon mustard, miso paste, maple syrup and vinegar; mix well until the dressing is smooth.

Place the rocket leaves in a large bowl and pour half the dressing over the top. Toss the salad until evenly spread.

Add the rest of the dressing and ingredients to the bowl and serve!
