Chicken Satay Noodles Recipe

Protein Rich Chicken Satay Noodles

Noodles are a great meal to alter and change to your preference and diet! They’re great for weight loss and healthy eating, they provide a healthier alternative to other high carb dishes such as pasta, while remaining to satisfy cravings and provide the perfect simple dish.

Satay noodles are a balanced dish high in protein and fibre, perfect for a quick and easy meal prep.

This recipe below serves 4:

Ingredients

2 tbsp sesame seeds

1 large carrot sliced

1 cup bok choy

1 red chilli finely chopped (optional)

1 cup snow peas

1 cup bean sprouts

1/2 lb rice noodles or noodles of choice

14 oz cooked shredded chicken

2 tbsp natural peanut butter

2 tsp soy sauce

1 tsp sesame oil

1 lime juiced

1/4 cup fresh cilantro chopped

Olive oil spray

Method

  1. Cook the noodles in boiling water following the instructions on the packet.
  2. Drain them and place back into the pan (off heat) with a cover to keep warm.
  3. Cut the shredded chicken and add to the noodles.
  4. In a separate bowl add peanut butter, lime juice, sesame oil, soya sauce and sesame seeds. Whisk until smooth.
  5. Add the carrot, bok choy, snow peas and chilli in a frying pan with 1 spray of olive oil. Lightly cook and add to the chicken and noodles.
  6. Drizzle the sauce over and serve into 4 portions.

This dish is perfect to store refrigerated for an easy lunch option or for an evening meal, enjoy!
