Fitness Camp Cheesecake
There's nothing better than having fitness camp food that is super tasty and super good for you. The new FitFarms Fitness Camp healthy cheesecake covers all the healthy areas and taste great as well.
Healthy Fitness Camp Cheesecake Ingredients
(Serves 16 in a medium sized baking tin)
The Cheesecake topping
2 cups raw cashews
1 cup of full fat coconut cream
4 table spoons of maple syrup
1 teaspoon vanilla extract
The Cake Mix
4 cups of finely shredded carrots
3 cups of pitted medjool dates
3 cups of raw walnuts
3 teaspoons of vanilla extract
Pinch of Cornish/ Himalayan Salt
1/2 tea spoon ground cinnamon
3/4 tea spoon ground ginger / root ginger will add more of a ginger taste
Pinch of nutmeg
1 cup of coconut flour
1/2 cup of raisins
Healthy Fitness Camp Cheesecake Cooking Method
This one is super simple to make as there is no baking involved.
For best results soak the cashew nuts overnight. If you haven't got time to wait overnight a minimum of 4 hours is needed.
Add the grated cashews, lemon juice, coconut cream, maple syrup and vanilla essence and then blend until the mixture is creamy and smooth. Place the mixture in the fridge.
Then add all the cake mix ingredients into a blender. Blend until all the ingredients is combined together.
Place the cake mix into the bottom of a medium springform pan (7-9 inches)
Next take the topping out of the fridge and pour on the top of the cake mix.
Then place the springform pan into a freezer for 4 hours. Take the cheesecake out of the freezer 30 minutes before serving and decorate the cake with fruit. You can also use nuts which has the added benefit of giving more protein to the cake.
