Fitness Retreat Healthy Noodle Recipe
Noodle Stir Fry Fitness Retreat Recipe
Ingredients (2 people)
200 grams of mixed beetroot, wholemeal and spinach noodles
150 grams of wild salmon
1/2 onion (finely chopped)
3 cloves of garlic (finely chopped)
30 grams of pine nuts
2 tsp rapeseed oil
Rock / Himalayan Salt
Black Pepper
1 red chili (roughly chopped)
150 ml coconut milk
100 grams of parmesan

Cooking Method
Using a saucepan add the rapeseed and cook off the onions for 2 minutes on a medium heat. Then add the garlic and fresh chili and cook for a further minute.
Add the wild salmon and cook for 5 minutes. Using a fork pull the salmon into bite size pieces.
Finally pour in the coconut milk and add 80 grams of the parmesan.
Bring water to the boil in a large pot. Drop the noodles into the pot and cook for 6 minutes.
Drain the noodles and add them to the other ingredients in the the saucepan. Stir the ingredients for 3 minutes. Season with salt and pepper.
Place onto a plate, sprinkle parmesan and grind black pepper before serving.
