Healthy Lasagne: Step By Step Recipe

Alternative Healthy Lasagne

Giving up your favourite dishes when targeting weight loss or focusing on healthier eating patterns isn’t a necessity. Tweaking your usual meals to align with your current diet plans helps to maintain variety and comfort cravings to keep you on track to a balanced lifestyle.

Here is a simple altered lasagne recipe, perfect to freezer store and have on hand for you and your family throughout the working week:

Ingredients

2 courgettes

2 eggplants

2 tbsp olive oil

Salt & pepper

450g lean turkey

1 onion, chopped

2 garlic cloves, minced

400g canned tomatoes

170g canned tomato paste

1 tbsp dried oregano

1 tbsp dried basil

1 tsp red pepper flakes

Salt & pepper, to taste

300g ricotta cheese

1 egg

150g spinach

50g grated Parmesan

150g mozzarella

Fresh basil

Method

  1. Preheat oven to 180°C. Slice courgettes and eggplants. Drizzle with 1 tbsp olive oil, season with salt and pepper, and roast for 10-15 minutes.
  2. Heat 1 tbsp olive oil in a pan. Sauté onion and garlic until soft.
  3. Add turkey and cook until browned. Stir in tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper. Simmer for 15-20 minutes.
  4. In a bowl, combine ricotta, egg, spinach, and Parmesan. Add salt and pepper.
  5. In a baking dish, layer turkey sauce, roasted veggies, ricotta mix, and repeat. Finish with a layer of turkey sauce.
  6. Top with mozzarella cheese and cover with foil. Bake for 25-30 minutes, then uncover and bake for another 10-15 minutes until bubbly and golden.
  7. Garnish with fresh basil, and serve!
