Meatballs And Courgette Spirals Recipe

This dish is a perfect alternative to meatballs and pasta, offering a light and healthy version to a classic dinner dish. Ingredients

1/2 courgettes

100 grams turkey or beef mince

¼ whisked egg or the egg white of 1 egg

2tbsp breadcrumbs

½ tin of chopped tomatoes

1/4 red onion

1 garlic clove

Mixed Italian herbs

2tbsp of rapeseed oil

Salt and pepper

Method

  1. Spiralize the courgettes. If you don't have the right tools, simply peel finally.
  2. Add your choice of high-quality minced meat with the onions, garlic, bread crumbs and Italian herbs into the bowl. Whisk the egg and combine into the mixture.
  3. Slightly wet your hands to prevent sticking and roll your mixture into separate balls of chosen size.
  4. Fry the balls over a medium heat with the rapeseed oil and tinned tomatoes until cooked evenly brown.
  5. Fry the courgettes in garlic and rapeseed.
  6. Place on a plate and add your meatballs on the top. Season with salt and pepper.
