Weight Loss Retreat Massaman Curry
Massaman Thai curry is relatively mild but if you need a little more heat just add some more chilli.
You can buy a decent healthy Massaman paste from the supermarket but if you have more time making your own is always going to be better. When buying the paste make sure to check the ingredients making sure the herbs and spices come first and avoid chemicals and sugar or at the least make sure they're very low down the ingredient list.
OK first lets make a traditional massaman curry paste.
1/4 cup dry roasted unsalted peanuts
2 shallots
5 garlic cloves peeled
2 re chillies add another 1 if you want to move up with the heat
1 inch of ginger
1 stalk of lemongrass
tsp coriander
tsp cumin
1/8 tsp nutmeg
1/2 tsp cinnamon
1/8 tsp ground cloves
1/4 tsp cardamon
2 tbsp fish sauce
1 tbsp shrimp paste
2tsp maple syrup
3 tbsp coconut milk
Now you've got all the ingredients together all you have to do is put into a blender and blend away to create a paste. If you want to turn it into sauce add a tin of coconut milk. This is the typical southern Thai style way which has Indian influences in the spices.

Add 1 can of coconut milk and 1 can of tinned tomatoes to the paste which turns it into a soup.
Bring to boil 2 lites of water in a large pot and add 2 leeks, 1 onion, 1 cauliflower and 2 pak choi and 250ml of vegetable stock.
Simmer for 40 minutes and then add the Massaman soup.
Note: If you decide to buy a good quality paste just add 1 tin of tomatoes and coconut milk to the bought paste to create the soup.
Cajun Chicken as the topping
Place 400 grams of chicken in a bowl and season with salt, pepper and cajun chicken.
Put into an oven at 180 degrees for 30 minutes.
