Weight loss retreat meat balls
Lean beef meat balls in a tomato basil sauce served with roasted broccoli
This high in protein dish is a winter favourite and the roasted broccoli with Cornish rock salt makes a great vegetable side dish. It's extremely easy to make and makes for a good family dish.
Ingredients
500grams of lean beef mince
400grams of tin tomatoes
6 tbs of olive oil
2 brown onions
2 garlic cloves
2 handfuls of basil
1 tbs of dried mixed herbs
500 ml of fresh beef stock
Salt and Pepper to taste
2 x Broccoli
Cooking Method
Cook off the onions and garlic in olive oil.
Then add the herbs, tomatoes and beef stock and bring to a simmer.
To prepare the meat balls mix the garlic, dried herbs, salt and pepper.
Wet your hands and roll the mixture into balls.
Next brown of the meat balls and then add them to the sauce and cook in 180 degree oven for 40 minutes.
Roasted broccoli
Cut the broccoli into medium size pieces.
Drizzle olive oil and sprinkle with the Cornish rock salt.
Place in the oven at 150 degrees.
Serve the meat balls and sauce next to the broccoli and garnish with basil.
